Three to four days is ideal. Day 1: Long Beach and Duong Dong Night Market. Day 2: motorbike to Sao Beach and the fish sauce factories on the south road. Day 3: boat trip to An Thoi Islands for snorkeling. Day 4: Starfish Beach and the pepper plantations in the interior. Two days feels rushed. Five days is possible but you will run out of new beaches.
